Hi guys!! This blog is going to feature more of a tips based baking feature on the lemon cookies I made. I made these cookies: Soft and Chewy Lemon Sandwich Cookies (Easy Recipe). They were very easy to make and very delish!!
Lemon Sandwich Cookies
As you can see, they do not look very sandwichy!! That is because I way oversized them when baking. However, they still turned out yummy and the texture was really good against the lemon flavour.
Tips:
- Size them very small, about a tablespoon. If like me you do them too big, leave them as cookies and drizzle the icing on top.
- Make frosting with the correct cream cheese! I accidentally got whipped cream cheese and it made for very runny icing.
- Dipping them in sugar creates a very sweet flavour, on top of the already sweet cookie. Leave this step if you do not want them overly sweet.
- Space them on enough baking trays, especially to make sure they do not overlap. I wasn't 100% bothered as I did not do the sandwich part but if you really want them like that, this step is crucial!

This recipe gets an 8/10 from me and a giant thumbs up. I usually make chocolate cookies and have never done any other flavour. For my first lemon cookie, I am very happy with the recipe and the results!1 Let me know if you try it out :)
